It’s not every day you find yourself standing on a field at 10am, surrounded by colleagues (some chopping veggies, others grilling chicken under the rarest of Irish suns, still others trying to figure out a temporary sales terminal) and preparing to serve a banquet to 120 people in a tent, while slowly a queue forms at the barriers and a DJ begins to warm up at the decks. And yet, here we are.
